1. This is moldy watercress. Generally, it can be lightly washed. What you need is the mold layer on the watercress (I don't like it, so I wiped it clean). Soak the washed watercress in white wine for more than one day or two or three days (some beer is also ok).
2. Wash the bought red pepper in the target bubble, and drain the water after washing.
This is done by machine outside (every year when it comes to making Chili sauce, there are many people queuing for Chili sauce).
4. Pour the salt aside and stir it evenly (I stir it with a rolling pin). I can use about a packet of salt.
5. Add a little ginger sauce and mix well.
6. Drain watercress from the wine and mix well with pepper. Cover the pepper to prevent flying insects or dirty things from falling into it and let it breathe (defoam).
7. After a few days, the bubble has basically disappeared. Put the bean paste in the jar, not too full. Pour some vegetable oil on the pepper (raw and cooked, I use raw). When the edge of the jar is covered with water, it can be used within two months.
