A whole piece of pork belly should be depilated first. After the iron pan is heated, the skin side faces down, and the pigskin will turn black after repeated wiping in the pan! Brush the pigskin clean with a steel ball and brush off the black impurities.

Pork belly is cut into pieces with a thickness of about 1 cm.

The authentic practice of Jinan bazi meat is to slice it first, and then fry it to remove the excess oil and fishy smell from the fat meat. The oil temperature in the pot rises to 80% heat, then add the meat pieces, fry until slightly yellow, and drain the oil.

However, considering that you do it at home, you can use blanching to avoid wasting too much oil. Put the meat in cold water, add some cooking wine to remove the fishy smell, boil over high fire, skim off the floating foam with a spoon, cook for 1 min, and take it out for later use.

Pickling is the key step!

Add appropriate amount of cooking wine, 15g soy sauce, 10g soy sauce, 8g salt and 20g sweet noodle sauce to the pork belly, stir well, cover with plastic wrap, and marinate in the refrigerator for 2-3h.

Don't dislike curing meat for a long time. If you want to eat delicious meat, you must be patient. Authentic meat needs to be spread flat, salted and air-dried, so that the juice can be completely immersed in the meat and it tastes delicious! We don't have to make it so complicated at home.

Prepare 1 casserole or Taji pot first, and it is best to put a bamboo curtain at the bottom of the pot, or you can use an iron pot if you don't have a casserole at home. Prepare some cotton ropes and tie a knot at each end of the braised pork.

Authentic bazi meat is tied with cattail or Ma Lian grass, and its purpose is to prevent cooked fat meat from being separated from lean meat for a long time. If you can't find it at home, just tie it with cotton rope!

Try to make you taste the original flavor!

Put the classified meat in the casserole and put it in order. Every two pieces of meat should be separated by two pieces of onion and two pieces of ginger, one layer of meat, one layer of onion and one layer of ginger to make the meat taste better.

Add 2-3 rock sugar to refresh, meat is not a dessert, don't put too much sugar! Then put the prepared spices (3 grams of Zanthoxylum bungeanum, 3 slices of fennel, 3 slices of fragrant leaves, 3 grams of Amomum tsaoko 1 slice, 3 grams of cinnamon and 2 slices of star anise) into a small gauze bag and put them into a pot.

Add water to the pot, and the amount of water is flush with the meat. Add half a teaspoon of light soy sauce, 1 teaspoon of light soy sauce pigment, 1 teaspoon of monosodium glutamate, 1 teaspoon of cooking wine, cover and boil. After boiling, taste it, and then simmer for 1-2 hours.

But! Whether you use a casserole or an iron pot, you should be careful not to let the soup dry during the stew. Stewing for a long time makes the meat crisp and rotten. As the saying goes, "a good meal is not afraid of being late." If you want to eat delicious food, you must be patient!

Happy tip: You can stew in an iron pot or a pressure cooker. The taste is similar, but the taste is a little different. Again, sugar is for refreshing, don't put too much!
