Main ingredient: 1500g pork belly
Accessory ingredients: onion, ginger, salt, marinade, dark soy sauce, light soy sauce, ginger juice, and rock sugar in appropriate amounts

Method
1. Prepare the ingredients. Wash the pork belly and cut into large pieces; wash and cut the onions into sections; wash and slice the ginger.
2. Put the pork belly into the pot, add appropriate amount of water, white wine, anise and green onion and cook together.
3. After boiling, skim off the foam and cook for another 5 minutes, then turn off the heat.
4. Take out the cooked pork belly and put it into a casserole, add dark soy sauce, light soy sauce, ginger slices, ginger juice, rock sugar and marinade (Sichuan peppercorns, angelica angelica, nutmeg, cinnamon, anise, cumin, bay leaves, galangal, gardenia), add enough water to cover the meat.
5. Bring to a boil over high heat, then reduce to low heat and simmer until the pork belly is tender.
6. Finally, use high heat to thicken the soup until the color is red. It takes about 2.5 hours.
