Saozi noodles are a special delicacy of Shaanxi.
Saozi noodles have a long history and contain side dishes such as tofu, eggs, etc., and are simple to make. Saozi means diced meat. For Shaanxi people, the color of the noodles is particularly important. Yellow egg skin, black fungus, red carrots, green garlic sprouts, white tofu and other ingredients are both beautiful and delicious.
Sào noodles are one of the characteristic traditional noodles in Shaanxi Province, China, and are a famous Xifu snack. The Qishan sào noodles in Baoji are the most authentic. It is popular in Guanzhong Plain of Shaanxi and Longdong of Gansu.
