Clean the sea clams with water, and drain

Mix the sea clams, sweet potato starch, parsnips, salt, and a little bit of water, and scrub gently. (Make sure to protect the belly of the sea clams so that they don't break.)

Place the eggs in a bowl and beat them well

Heat a pan, put in a moderate amount of oil, and over low heat until 7 minutes hot, pour in the sea clams paste, and fry them until golden on both sides

Drizzle the sea clams around the sides, and then pour in a little water. >Drizzle the egg mixture around the perimeter and remove from the pan when the egg mixture is golden brown and caramelized on both sides.
