Method for pickling goose eggs
Preparation materials for making salted goose eggs:
17 goose eggs, 20 peppers, star anise 1 piece, a piece of cinnamon, a piece of fragrant leaves, 300g sea salt, Erguotou 100ml. [2]
Salted goose egg method:
Wash, peel and dry goose eggs.
Put a proper amount of clear water into the pot, add pepper, star anise, cinnamon and fragrant leaves, bring to a boil with high fire, turn to low heat and cook for 10 minute, add sea salt and stir until it melts, turn off the fire and let it cool.
Put the goose eggs in a clean and waterless container prepared in advance, take out the seasoning in the boiled salt water, and pour the water into a sealed box to avoid the goose eggs.
Pour in white wine, cover in the shade and store for 30-35 days.
Wash the salted goose egg skin, put it in a pot, add water to the goose egg and cook for 20 minutes.
Common ways to eat goose eggs
1, vegetables and eggs
Ingredients: 1 Pack pickles, 2 goose eggs and a little garlic.
Practice: break the goose eggs into a bowl, soak the vegetables in water, grab them evenly with your hands, take them out, drain them and squeeze them dry. Heat a wok, add half a bowl of oil, stir-fry the vegetables slightly, add garlic, stir-fry until the vegetables are dry and fragrant, and put the goose eggs in the wok and fry them slowly until both sides are golden.
2. Beans and goose eggs
Ingredients: 4 long beans, 2 goose eggs and a little garlic.
Practice: Wash the long beans and cut them into fine particles. Beat the eggs into a bowl, heat the wok, slightly heat the oil in the second half bowl, stir-fry the long beans and garlic for half a minute on medium heat, fry the duck eggs until golden on both sides, sprinkle some soy sauce and turn over, and then serve.
3. Fried eggs with minced meat
Ingredients: minced meat 100g, 2 goose eggs, onion 1 root.
Practice: Sprinkle some pepper on the minced meat, mix well with soy sauce, beat the goose eggs into a bowl, break them up with shallots (until bubbling), heat the wok, slightly heat the oil in the lower half bowl, stir-fry the minced meat until it is half cooked, and then slowly stir-fry the goose eggs until both sides are golden.
4. Fried eggs with shrimp
Ingredients: Chopped shrimp 100G, 2 goose eggs scattered, onion 1 diced.
Practice: Heat the wok, heat the oil in the second half bowl, stir-fry shrimp, goose eggs and shallots until golden on both sides, and sprinkle with soy sauce.
5. Fried goose eggs with onion
Ingredients: 2 chopped green onions and 2 broken goose eggs.
Practice: Heat the wok, lower half bowl of oil, slightly hot, add chopped green onion, stir-fry goose eggs for a few times, slowly fry with slow fire until both sides are golden, remove excess oil and sprinkle with soy sauce.
6. Fried goose eggs with sausage
Ingredients: 2 slices of sausage (thin or thick according to your preference) and 2 goose eggs.
Practice: Heat the wok, add 1/4 bowl of oil, stir-fry the sausage for a few times over medium heat, then add the goose eggs and fry until both sides are golden, remove the excess oil and sprinkle some soy sauce.
When frying sausages, be careful not to burn them. Sausages release oil when they are fried.
