The shell of razor clam cannot be eaten. Although the shell of razor clam is composed of chitin, protein and minerals, its structure is different and it can't be eaten.
When dealing with razor clam, the black viscera inside must be squeezed clean. The viscera of SINONOVACULA constricta contains heavy metals, sand, excrement and so on. You can cut the intestinal gland of the shelled razor clam with a knife, remove the sand and black edges inside, and finally rinse it with water. If the razor clam is directly heated or fried without shelling, then the black part can be directly picked out when eating (as shown in the picture).
Cleaning method of razor clam:
1. The razor clam I bought is very dirty. There is a lot of sand in its belly, so it must be cleaned before it can be eaten. Put the razor clam in a leaky basin and in water with sea salt. The reason why we put two chopsticks at the bottom of the basin is that the razor clam absorbs water at the same time. After putting the chopsticks away, the spit sand will be directly.
2. Wash the razor clam with light salt water several times, clean the dirty things on the shell, then drain the water, and finally put it in water to cook, take out the razor clam meat and then clean it.
3. Blanch the razor clam in a boiling water pot, take out the razor clam meat, tear off the black line on it, remove the black "sandbag", squeeze the straw of the razor clam by hand, squeeze out the dirty things inside, and then rinse it with clear water.
