Winter is the time when hairtail meat is at its most plump. In order to survive the winter, hairtail fish have accumulated rich fat in their bodies. In contrast, the meat is thick, tender, oily, and tastes particularly good. Maoyu is a fish with thick flesh and few spines. It is rich in nutrients and easy to prepare. It can usually be stir-fried or stir-fried. I have to mention that when hairtail is fried in the pot, the aroma usually fills the whole room, which is particularly appetizing. First: Braised Hairtail
This is a classic way to eat hairtail, from snacks to big ones. The hairtail produced in this way is bright and attractive in color, the fish meat is tender and smooth, and salty and appetizing, especially on the plate.
Specific manufacturing method
Step one: prepare ingredients. 2 medium-sized hairtail fish, appropriate amount of ginger, onion and garlic.
Step 2: Wash the hairtail and cut into 10 cm long sections. Chop onions, ginger and garlic.
Step 3: Add minced ginger, 2 spoons of cooking wine and half a spoon of salt to the hairtail, mix well and marinate for 10 minutes.
Step 4: Pour 40 ml of water into 30 g of flour to make a batter and set aside.
Step 5: Pour appropriate amount of oil into the pot. After the oil is hot, place the batter-coated hairtail in the pan and fry until golden brown on both sides. Take it out. (Fried hairtail must be shaped and then turned over, otherwise it will easily stick to the pan and make the surface of the hairtail incomplete. If you want to save fuel, you can cook it in a pot and choose the half-fried and half-fried method.)
Step 6: Change Pour a little cooking oil into the pot, add ginger, onion and garlic, and stir-fry two star anise until fragrant.
Step 7: Add the hairtail fish to the pot and stir-fry.
Step 8: Add 2 tablespoons of soy sauce, 1 tablespoon of sugar and half a tablespoon of salt to the pot and stir evenly.
Step 9: Pour appropriate amount of hot water into the pot.
Step 10: After the high heat comes to a boil, turn to low heat and simmer for 7-8 minutes. Finally, drain the soup and serve.
The second method: dry-fried hairtail
The hairtail is golden and crispy, delicious and attractive. It can be said that it is not only a dish but also a snack. Even people who don’t like fish can eat a few pieces, especially when watching TV dramas.
The first step: prepare the ingredients. Two hairtail fish (wash and cut into sections for later use), appropriate amount of minced ginger, appropriate amount of chopped green onion.
Step 2: Pickle. Mix the hairtail part with minced ginger, chopped green onion, cooking wine and salt, and marinate for about half an hour.
Step 3: Pat a layer of corn flour on the surface of the salted hairtail fish.
Step 4: Put an appropriate amount of oil into the pot. When the oil temperature is 50% hot, you can put the hairtail into the pot.
Step 5: Fry over low heat and turn over when the surface is golden brown.
Step 6: Fry both sides until golden brown.
Tips.
1. Hairtail should not be too big or too small. About five or six centimeters wide is best.
2. When frying hairtail, it is recommended to cook it in a pot. In this way, not only a large amount of fish is fried at one time, but also fuel is saved.
3. When pickling, it depends on the size of the hairtail.
4. Be sure to stir-fry over low heat.
Third: Hairtail with Tomato Sauce
Fried hairtail with red tomato sauce, sweet and sour, appetizing, especially tempting. After eating the fish, you can also mix the remaining soup with rice, especially for appetizers.
Step one: prepare ingredients. 600g hairtail, appropriate amount of tomato sauce, appropriate amount of onion and ginger.
Step 2: Wash the hairtail and cut into segments. Add ginger slices, green onions and 1 spoon cooking wine, marinate for 15 minutes.
Step 3: Apply a thin layer of cornstarch to the surface of the salted hairtail fish, as shown in the picture.
Step 4: Stick on all the starch.
Step 5: Pour a little oil into the pot. After the oil is hot, put the hairtail fish into the pot and start frying over low heat.
Step 6: Fry until one side is golden brown, flip until both sides are golden brown, control the oil and remove.
Step 7: Leave a little base oil in the pot, then fry the tomato paste in the pot into red oil, then pour in half a bowl of water, then add 2 tablespoons of sugar and half a tablespoon of salt to taste.
Step 8: Put the fried hairtail into the pot, stir-fry evenly, then cook for 1-2 minutes, then turn off the heat.
Step 9: Plate and serve~
