Tools/materials: perch, onion, ginger, coriander, cooking wine, oyster sauce, white pepper, soy sauce, salt, plate, chopping block, knife and steamer.
1. Wash the perch cutter, and pour in proper amount of cooking wine, oyster sauce, white pepper and salt and mix well.
2. Shred onion and ginger. Take some scallion and shredded ginger and stuff them into the fish. Put some scallion and shredded ginger in the flower knife and marinate for 10 minutes. Don't run out of shredded onion and ginger.
3. Put the marinated perch in a dish and add oyster sauce and soy sauce.
4. Put some shredded ginger and onion on the fish, and steam the fish and plates on the steamer 12 minutes.
5. Take out the steamed fish, throw away the onion on it, add onion leaves and coriander, pour the oil on the fish and steam the bass.
