The steps
First step
Separate the egg whites and yolks. Separate them into oil-free and water-free pots!
Step 2
Add apple cider vinegar, milk, oil, and 15 grams of sugar to the egg yolks! Whisk well!
Step 3
Sift the flour into the egg yolk batter and toss up and down in a scrambled manner! Remember not to make circles to prevent the batter from becoming glutenous! The batter will be smooth and thick when it's well mixed!
Step 4
Start beating the egg whites, when the egg white liquid turns white and bubbles appear, add 20 grams of sugar!
Step 5
Whisk until the egg white mixture is thick and smooth, and when traces appear, add 20 grams of sugar!
Step 6
Continue whipping until the egg whites are more pronounced when the traces are visible add the last 20 grams of sugar!
Step 7
Whip until small sharp corners appear when you lift the whisk! Change the angle and raise the whisk without the egg white mixture dripping!
Step 8
Add a small portion of the whipped egg whites to the whisked egg yolk mixture or toss up and down to coat!
Step 9
The flipped egg white and yolk mixture will all go into the whipped egg white mixture, tossing up and down to combine!
Step 10
Grease the container with a layer of oil, in order to make it easier to take off the mold after the cake is steamed! Pour the whisked egg batter into the container and gently shake out the air bubbles!
Step 11
Fill a steamer with water, put in the shaken batter and steam for 40 minutes! When the time is up, don't rush to lift the lid! Simmer for another five minutes and then invert immediately! Remove the mold
