5. Put all the sugar, maltose and water in the pot and bring to a boil over medium heat.
6. After boiling, you can see bubbles, then turn to medium to low heat and cook, stirring constantly.
7. When the color starts to slowly turn yellow (the color in the picture below), you can start to taste the sugar.
8. Dip a little syrup with chopsticks, then quickly put it into cold water and take it out. If the sugar tastes crunchy and does not stick to your teeth, it means the sugar is ready. If it sticks to your teeth, continue to simmer it over medium-low heat. At this time, you need to pay attention to the sugar, don't let it burn, and stir occasionally.
9. At this time, turn on the minimum heat, add the fried sesame seeds, and stir quickly.
10. After mixing, pour it onto the cutting board, flatten it into a rectangle with a knife, or use a mold to shape it.
11. Then cut into small slices. Cut quickly. The sugar will break into pieces when it is completely cold.
12. The freshly cut sugar should be spread out. The hot ones will still stick together. Just let it cool.
