Ingredients
1 egg yolk
Olive oil 150 ml
Salt 1.5 g
Lemon juice/white wine vinegar 1 tsp
Cool white wine 10 ml

Moisten a towel and make a circle to hold the bowl! Add salt to the yolks and mix well with an egg pump!

Then use a spoon to scoop a small spoonful of oil, one hand holding the oil spoon, the other hand holding the egg pump, oil added drop by drop, the egg pump continuously stirring! Let the oil fully and egg yolks mixed together, this stage must not be rushed! (Normal an egg yolk can add 150 to 250 ml of oil)

After adding a few tablespoons of oil will find that the egg yolks begin to show a creamy texture, you can add lemon juice, you can also switch to the same amount of white wine vinegar or lemon juice and white wine vinegar mixed together! After adding the lemon juice, the egg yolks will turn white, so you can speed up the process a bit and add the oil one spoonful at a time! But make sure that the first spoonful of oil is thoroughly absorbed by the egg yolks before adding another spoonful!

When the oil is halfway through the process, you may find that the mayonnaise you're mixing is oily and dry!

After adding a small spoonful of water, you will find that the egg yolks are back to a creamy, thin texture, then you can continue to add oil to it, also a small spoonful of a small spoonful of oil! Finish adding the remaining oil!

When all the oil has been added, you can add a little water to adjust the mayonnaise's state, also add a small spoonful of water, each time you add water, stir well to ensure that the consistency of the state of the texture you are satisfied with the state of the mayonnaise! The final result should be a light yellow, fine cream!

Newly made mayonnaise is a bit strange smell, but it is okay, put it in the refrigerator for about 2 hours (preferably overnight), you will find quite delicious Oh! (The finished mayonnaise is slightly salty, so if you like it sweet, you can add some sugar, but the salt must not be missing!)
