Fried mandarin fish
Ingredients
One mandarin fish, 100 grams of sesame seeds, salt, ginger juice, wine and scallions, a little each of cornstarch, and 1 egg .
Method
1. Wash the mandarin fish, remove the meat, and leave the head and tail.
2. Cut the dried fish into diamond shapes, add salt, ginger juice, wine and green onions and marinate for 30 minutes.
3. Mix the eggs and cornstarch evenly, dip the fish in the batter, sprinkle with sesame seeds and fry in 50% hot oil for about three minutes. When the oil temperature rises to 80% hot, fry the fish until golden brown and serve on the plate. After the fish head and tail are fried, place them on both sides of the fish and serve.
