Cold noodles

1. Knead the noodles. Add a small spoonful of salt to 400g of high-gluten flour, pour in 250g of water, and stir into floc while pouring the water.

3. Make gluten. After the dough is cooked, pour cold water over the dough and start washing the dough. Keep kneading and washing until only gluten is left.
4. Add 1~2g of yeast to the washed gluten and knead evenly. Ferment until there are pores and then put it into a steamer to steam.
5. Steam the cold skin, sieve the batter, cover with plastic wrap and let it sit for 4 hours. Pour off the surface water and leave the batter until evenly stirred.
