Specific Steps
First Steps
Put the clams in a pot and put cool water, put some salt in the water to make the clams spit out the sand. Leave it for about 2 hours. Rinse with water and set aside. Peel the winter melon and cut 3cm size pieces and set aside.

Add the stock, green onion, ginger and cooking wine to the casserole, and when the pot comes to a boil, add the clams and simmer over low heat for 30 minutes, then use chopsticks to fish out the green onion pieces
Step 3
Put in the winter melon cubes, and continue to simmer for another 30 minutes over low heat, adding a little salt to taste.
