What does もんじゃ焼き (もんゃ焼き), a favorite food of Hiroki Aiba, mean?
Tokyo-yaki, also known as monjayaki, was named after the fact that after pouring in the batter, a small spatula is used to make a figure eight in the center of the pan to cook it, similar to writing. The process of making monjayaki is quite elaborate, first you need to put the meat, cabbage, shrimp, mentaiko and other ingredients, when the ingredients are half-cooked, dig a hole in the center, pour the batter, and wait until the edges of the frying is slightly charred to enjoy.
