The main ingredients are shown in the picture, and the pigeon is a meat pigeon bought at the vegetable market, which is relatively large, one is enough, and I don't think it needs to be blanched for raw stir-frying, so I'll start directly.

Start a frying pan, first under the onion and ginger slices burst incense, and then under the pigeon meat, large fire quickly stir fry, to prevent sticky pan. Wait until the pigeon meat shrinks and the skin is lightly browned.

Then add cinnamon, star anise and peppercorns and stir-fry with the flavor. These spices are not very resistant to stir-frying, and they tend to become bitter when the heat is high, so I add them in later.

Add the bean paste and stir-fry evenly until the flavor of the sauce becomes apparent.

Then add the beer, in order to not over the ingredients as appropriate. After that, add a spoonful of soy sauce, a spoonful of dark soy sauce, and a teaspoon of sugar to taste; add dried mushrooms and small onion knots, bring to a boil over high heat, then turn to medium heat and cook for about 7 minutes, so that the pigeon meat is fully flavored!

When the soup in the pot slowly thickens, drizzle a little sesame oil, stir-fry quickly over high heat to drain the juice and release the pot! The oil is to personal taste, not necessarily put it.
