Methods of Braising Dried Red-Headed Fish

Prepare green onion, ginger, garlic, and capsicum.

Soak the dried red head fish in clean water for 3-4 hours in advance, soak it until it is as hard as you like.

Heat the oil in a pan and add onion, ginger, garlic and chili peppers and stir-fry to bring out the flavor.

Add dried fish and saute it.

Add some cooking wine to remove the fishy smell.
6.
Add flavorful soy sauce.
7.
Add appropriate amount of water, add some braising sauce to mix well.
8.
Add a pinch of salt to taste and cook over medium-low heat.
9.
Cook until the soup is thick add chicken essence to mix well out of the pot.
