It’s delicious, but there’s slag inside. The outside is sweet red maltose.
When it comes to candied haws in Beijing, I have to mention that there were three time-honored brands in Beijing: "Xinyuanzhai", "Jiulongzhai" and "Bu Laoquan".
The predecessor of Xinyuanzhai is Xinyuanzhai. Yuanzhai Honey Fruit Shop was founded in the fifth year of Qianlong reign of the Qing Dynasty (1740). It was originally located in Dongliuchang. The founder’s surname was Xiao (some say Liu). Zhu Yifan, the teacher of the Guangxu Hanlin Academy and the last emperor Puyi of the Qing Dynasty, was very fond of Xin Yuanzhai. I admired the preserved fruits and sour plum soup so much that a plaque with the inscription "Xinyuanzhai Honey Fruit Shop" was hung on the lintel.
The Spring of Youth was built in the first year of Qianlong in the Qing Dynasty (1736), and its original location was in Liulichang. In the Qing Dynasty, Jiyun (also known as Xiaolan) admired the candied haws of the Fountain of Youth very much. He once wrote a self-deprecating poem: "The officialdom rises and falls like a sea of ??gulls, and the Fountain of Youth is full of books about life and death." We specialize in delicious foods that are in season. We make homemade candied haws in winter, and the raw materials for making the food are very strict. The method of making candied haws is even more unique. The hawthorns are made from high-quality Jinxing hawthorns produced in Shandong, and the auxiliary ingredients are golden rock sugar. Select the best red fruits, remove the pits, and string them into bunches, but leave a certain gap between the fruits so that each red fruit is evenly coated with rock sugar. Some even cut a hole in the fruit and add homemade fine bean paste. Walnuts and yam puree are covered with a thin layer of black bean paste, and white melon kernels of different shapes are arranged on the bean paste, and then dipped in rock sugar juice. The appearance is red, white, and black. It tastes sweet, sour, crispy, and has a refreshing taste. .
I don’t know if Jiulongzhai was established.
Production steps
Ingredients: red fruits, white sugar
1. Selection of bunches of fruits. Wash fresh, plump, and evenly sized red fruits. Cut the red fruits in half, use a knife to remove the core, and then close the two halves. Use a bamboo skewer to string up about ten pieces in each bunch.
2. Boil the sugar. Pour the white sugar into the pot, add water at a ratio of 2:1 between sugar and water, and simmer over high heat for about 20 minutes. When the sugar is just cooked, it becomes thick and transparent. . If the boiling time is not enough, the sugar will stick to the teeth; if it is boiled for too long, the sugar will taste bitter.
3. Dip the skewered red fruits into the boiled hot sugar. Gently turn the foam and coat it with a thin layer. The master who makes the candied haws said that the process of dipping it in sugar seems simple, but it requires skills. If the sugar is too thick, you will not be able to bite the fruit. Failed. If the sugar is dipped in a thin and even layer, it will be considered successful.
4. Cool the red fruit skewers dipped in sugar for two to three minutes and enjoy. Water board is actually a smooth wooden board that has been soaked in water for a long time and has a lower temperature. At the same time, the wood is water-absorbent, which can help the candied haws to cool and shape. When making it at home, you can use a cutting board instead. Just clean it before use. Just soak the chopping board in water for a while.
Later this practice spread to the people, and people skewered it and sold it, which became candied haws. It turns out that hawthorn has many medicinal effects, and it can digest food. It can dispel congestion, dispel congestion, drive away tapeworms, and stop dysentery. It especially helps digestion. It has been an important medicine for eliminating food accumulation since ancient times, especially for eliminating meat accumulation. Perhaps the delicacies eaten by Huang Guifei were accumulated in the food and caused the illness. The little hawthorn relieved the illness. Li Shizhen, an outstanding medical scientist in the Ming Dynasty, once said: "The hard meat of boiled old chicken is easy to rot if you add a few hawthorn berries, so its effect of eliminating accumulation can be overridden."
Modern people Studies have shown that hawthorn also has the effects of lowering blood lipids and serum cholesterol, so it is more popular among people. Hawthorn food has also been refurbished and comes in many varieties. But the sweet, sour and crispy candied haws is still a delicious food that people love to eat to this day.
