Mixed lotus root
Ingredients
Ingredients: 300 grams of lotus root, a little green onion
Seasoning: appropriate amount of salt, 1 spoon of sugar, 1 spoon of lemon juice or 1 spoon of white vinegar, 1 pinch of pepper, 1 spoon of cooking oil, 1 spoon of red oil
Method:
1. Peel the lotus root and cut into evenly thin slices. Immediately put it into a pot of cold water and boil until the water boils. Drain and set aside.
2. Put the lotus root slices in a container, add salt, sugar, lemon juice, and red oil and mix well.
3. Add oil to the wok, add Sichuan peppercorns and stir-fry them over low heat. Pour the fried Sichuan peppercorns and the fried Sichuan peppercorn oil over the lotus root slices while they are still hot. Sprinkle with chopped green onions and serve.
Tips
1. The lotus root slices need to be cooked immediately after being cut, otherwise they will easily oxidize and turn black, affecting their appearance.
2. Lemon juice can be replaced with white vinegar. If you don’t mind the appearance, you can also use rice vinegar or mature vinegar.
3. If you don’t like spicy food, you can omit the red oil. Of course, if you like spicy food, you can also add spicy seasoning according to your own taste.
