The cake eaten during the Qingming Festival is called Qingming cake, which is a traditional Qingming Festival food popular in Jiangnan.
It is said that this traditional pastry for Qingming cold food was created in the Song Dynasty and was commonly known as "noodles" at that time. It was not until the Ming and Qing Dynasties that it became officially popular in Jiangsu and Zhejiang. How to make Qingming pancakes:
Ingredients: 500 grams of japonica rice flour, 333 grams of glutinous rice flour, 250 grams of cotton vegetables
Stuffing: pork, pickles, bamboo shoots , carrots, dried tofu, mushrooms, dried shrimps, green onions, etc.
Method:
1. Wash the cotton vegetables and blanch them. After blanching, remove them and rinse them with cold water.

3. Add japonica rice flour and glutinous rice flour (3:2) to the cotton vegetable juice, put it into the bread machine and select the dough mixing program.
