Method 1
Making materials
Ingredients: Tofu skin (1,000 pieces) (300 grams)
Seasoning: red glutinous rice (1 g) Ginger (3g) MSG (2g) White sugar (5g) Peanut oil (30g) Soy sauce (15g) preferably white soy sauce
Production process
1 . Spray the tofu skins (thousands of pieces) with water until soft;
2. After spraying, spread each tofu skin flat, overlap it and roll it tightly, put it on a clean cloth and wrap it into a round stick shape. Tie tightly with fine linen rope; 3. Set the wok over high heat, add water, add the tofu skin rolls, cook for 50 minutes and take them out. After cooling, untie the fine linen rope, remove the cloth, and cut into 1.5 cm thick slices;
4. Return the wok to high heat, add peanut oil, and heat until it is 80% hot. Place the tofu skin slices in the pan and let them pass through the oil for half a minute, then pour them into a colander to drain off the oil;
5 .Leave the oil in the wok, put it back on high heat, stir-fry the red glutinous rice and ginger slices, add some water, then add the tofu skin slices, add white soy sauce, white sugar and MSG, stir-fry a few times and it's ready.
Method 2
Ingredients: four pounds of dried tofu
Ingredients: soda, noodle base, aniseed, pepper, cinnamon, bay leaf, chili pepper, soybean oil, etc.
1. Cut the dry tofu into three sections, about an inch wide, into strips. Boil the water, add the loose dry tofu, and at the same time, add peanut-sized portions of soda flakes and soda flakes to the boil for 7- 10 minutes.
2. Remove and drain. Wrap it in gauze while it's still hot. Place the bag in a square draining utensil and compact it for 15 minutes.
3. Take out and cut into 2 cm thick slices, about 7 cm square, and fry them into shapes.
4. When the water is boiling, add aniseed, soy sauce, bay leaves, cinnamon, and pepper. It is best to add chicken soup. Add the fried dried tofu. When the soup is almost dry, take it out and cool it down. Can be eaten cold or stir-fried.
Technical Tips
1. To make vegetarian chicken, the sheets must be rolled and tied tightly, and boiled thoroughly with water. The finished product will be soft and hard, and the texture and taste will be like chicken;
2. Due to the frying process, 500 grams of peanut oil needs to be prepared.
