How to fry the salmon head?
Wash the salmon head and cut it into pieces (I asked the stall owner to cut it and take it back to wash it)
Drain the salmon pieces and add the black pepper.
Add salt and corn flour and marinate by hand 15-20 minutes.
Heat the pan, pour in a little oil, turn to medium-low heat, and fry the marinated salmon head in the pan until golden brown.
Then turn over and fry until the other side is golden, and then pour cooking wine along the edge of the pot.
Add half a bowl of water.
Cover the pot and simmer until the juice is slightly dry.
Add a proper amount of steamed fish soy sauce and stir fry a few times.
Finally sprinkle with chopped green onion and serve.
