Materials
450 grams of pork, 1 scallion, 5 slices of ginger, 4 star anise, seasoning: 30 grams of rock sugar, 1/3 tsp salt, 2 tbsp soy sauce, 1/4 tsp dark soy sauce, 2 tbsp cooking wine, 1000 ml of water.
Methods
1. Boil water in a pot, blanch the meat for about 2-3 minutes, remove and rinse.
2. Put 1 tbsp oil in the pot, add small pieces of rock sugar and stir-fry the sugar color on medium-low heat.
3. When the pan starts to smoke, dissolve the rock sugar and turn dark brown.
4. Add green onion, ginger and star anise and stir-fry, then add pork and stir-fry over low heat.
5. Stir-fry until the pork is lightly greased and evenly colored.
6. Add water, just enough to cover the meat. Add salt, soy sauce, dark soy sauce and cooking wine.
7. Covered with a large fire boil, turn the heat to simmer for about 60 minutes, when the soup left 1/3 of the ginger, star anise, green onion clip out.
8. About 50 minutes, open the lid on medium heat to cook the soup until thick.
