Quanjude legend

Quanjude, more than one billion people in China are familiar with this name, and it is also well-known in the world. But who knows what its predecessor was called? Who is its founder? What kind of hard struggle have you experienced?

"Virtue gathers all" becomes "Quanjude"

1834, Yang Quanren, who was only 15 years old, came to Beijing from Hebei and set up a stall selling raw chickens and ducks on Qianmen Street. Two benches and a chopping board are all his possessions. Yang Quanren, an escaped teenager who is only 15 years old, lives on the meager income of selling chickens and ducks every day. Every day when the sun goes down, on his way home from work, Yang Quanren will pass by the largest roast duck restaurant in Beijing at that time-Cheap Square. This clever and hard-working teenager silently made a wish in his heart: he could open his own roast duck restaurant one day.

In order to realize this dream, Yang Quanren waited for 30 years.

1864, 45-year-old Yang Quanren had enough savings in his hand, so he set up a dried fruit shop called Dejuquan and turned it into his own roast duck shop. In order to give his roast duck restaurant a good name, Yang Quanren also invited Mr. Feng Shui. Mr. Feng Shui looked at the store and told him that if a building was built on the new store, it would form the shape of an eight-lift sedan chair with the Jinger Hutong next to it, so that Yang Quanren could sit on the eight-lift sedan chair and the business of the new store would get better and better. However, to get on the "eight-lift sedan chair" was only a dream in terms of Yang Quanren's financial resources at that time. All he can do is to turn Deju upside down and become his own font size, and ask someone to write a plaque. I don't know why, since then, there has been one less horizontal line under "virtue", which has become an unsolved mystery until today.

At first, Quanjude's business was not very good. He also knows that if he wants to stand on the street outside Qianmen, which is full of restaurants, and become a famous shop like Bargain Square, he must have his own characteristics besides rich business experience. He invited Master Sun, who used to be a royal chef in the palace, at great expense. As soon as Master Sun arrived, Quanjude's business really exploded. Because he brought a completely different hanging roast duck technology from the traditional braised roast duck.

Quanjude's business is getting better and better every day. At this time, Yang Quanren remembered the words of Mr. Feng Shui. In order to dream of sitting on a big chair, Yang Quanren began to Gai Lou. He owed a lot of money for this. Unfortunately, Yang Quanren didn't see the completion of the two-story building. After the first floor was just built, Yang Quanren passed away in 1890.

The new shopkeeper invented the vouchers.

After the death of Yang Quanren, Li Ziming, a native of Shandong, became the new shopkeeper of Quanjude. Previously, he worked as an accountant in another restaurant. Li Ziming just took office, and debt collectors came to you one after another.

In order to deal with these debt collectors, Li Ziming had sent someone to wrap some gravel in red paper as silver and put sand into flour bags to pretend to be flour. But these methods, although temporarily sent away those debt collectors, can not be dealt with for a long time after all. After a long time, people who collect debts will not only make trouble at home, but also ruin Quanjude's reputation. But at that time, Quanjude's funds were really short, and in desperation, the shrewd Li Ziming came up with a way to kill two birds with one stone-to start issuing duck tickets to offset debts.

Quanjude issued duck tickets in Tongzhi, Guangxu and Xuantong years, especially when building a two-story building in Quanjude. In order to raise funds, a large number of duck tickets were issued. 1923, Quanjude stopped issuing duck tickets. Due to social unrest and vicissitudes of life, it is a pity that Quanjude failed to leave a duck ticket.

Quanjude's duck tickets are printed on red rice paper. The duck ticket is rectangular, with two corners cut off at the top, and the characters "Quanjude Duck Shop Ticket" are printed on the head. The contents of the bill are: take two roast ducks, pay a certain amount of money, and sign Quanjude's bright red seal at the signature.

Soon, people in Beijing will give Quanjude duck tickets to each other when they visit their homes on holidays. This kind of duck ticket not only replaces oily ducks, but also gives them to relatives and friends as gifts, which is very affordable (just like supermarket coupons and transportation cards today). Naturally, this kind of convenient and decent duck ticket soon became popular in Beijing. Due to good management, three years later, Li Ziming paid off all the debts owed by the old shopkeeper.

In addition to thinking in management, Li Ziming is also unique in management. In order to win more customers, he personally went to other restaurants to find an excellent head waiter (equivalent to a foreman). A good leader must have a very good memory. He will know his identity once he has been here, and he will be able to react immediately when he comes next time. The guests will be very happy and become regular customers from now on. Moreover, in order to convince every customer that Quanjude's products are genuine, Li Ziming also set up a special seller when customers choose ducks. The seller showed the live duck to the guest and asked the guest to personally write an inscription on the duck, indicating that the duck belongs to it. This has won the appreciation of many guests.

Li Ziming also has strict requirements for the guys who are also from Shandong in the store. At six o'clock every morning, the guys in Quanjude get up and start a busy day. He asked the guys to have rules in their daily lives, and not to spoil the image of Quanjude. There was once a guy who was fired just because he watched a vulgar Flower Drum Show. For those who were addicted to drugs or smoked opium, Li Ziming asked them to leave without mercy. He is reasonable to other honest guys in the shop. If there are guys who want to get married, Li Ziming will go a long way to attend their wedding, celebrate them, and send a thick red envelope. Therefore, it won the hearts of the people.

From Wu Peifu to Zhang Zuolin.

Just as Li Ziming was preparing for a big fight, 1922 1 month, the first direct war broke out and the direct warlord Wu Peifu won. For a time, there were all kinds of news that shops would be looted by soldiers, and the shop owners on Qianmen Street were worried.

On this day, an officer came from Quanjudeli, claiming to be the quartermaster of Wu Peifu troops. He told Li Ziming that Wu Da
