Braised pork with plum: dried plum, braised pork, onion, ginger, cooking wine, soy sauce, star anise, sugar and salt.
Exercise:
1. Wash prunes and soak them in water in advance.
2. Wash the whole pork belly and blanch it in boiling water. After removing the floating foam, add onion, ginger and cooking wine and cook for 20 minutes.
3. Put the oil in the pot, add the cooked pork belly and fry until golden brown, then pour in the soy sauce for coloring.
4. Cut the meat into thin slices after cooling, and code it evenly at the bottom of the bowl with the skin down.
5. Put oil in the pot, saute shallots, ginger and star anise, add pre-soaked plum vegetables, pour broth and cook for about 2 minutes, and add sugar and salt to taste.
6. Cover the fried plum vegetables on the meat and steam them on a steamer for about 50 minutes until cooked.
7. After steaming, remove the star anise, onion and ginger, buckle the meat on the plate, pour the excess soup back into the wok, and then pour the water starch soup on the meat.
