How to make handmade vegetable noodles?
Wash fresh vegetables Clean and beat into a paste with a food processor
Add eggs and vegetable juice into the flour, mix evenly with chopsticks, and knead with your hands. Basically, the amount of liquid in the vegetable juice is enough for the dough to absorb, so there is no need to add additional water.
Knead each dough into a ball, and add flour when pressing the dough later. The noodle machine will make it hard and not soft, but for the convenience of operation, I always knead the dough softer first and then press it later. Add more flour during the process to make it hard
Press it back and forth several times until it becomes smooth and flat.
After pressing it to the thickness you want, start pressing the noodles.
The prepared flour can be dried naturally, or it can be divided into portions and placed in the refrigerator. The portions are for each serving.
