Supercooled water.
The purpose of supercooling water is to shrink the freshly cooked noodles. The noodles that have been soaked in cold water will be more delicious. The surface of the noodles will be smoother and less likely to stick together.
To use cold water for takeout, first take out the cooked noodles with a slotted spoon and put them into a basin filled with cold water to cool the noodles. Then scoop out the noodles and stir them evenly with chopsticks to speed up the cooling of the noodles. After the final cooling, drain the water from the noodles and you can start eating.
