Wash the black beans. Add 720 ml of cold water, mix with baking soda, and soak the black beans until they swell, the outer skin cracks, and the green beans inside can be seen. Rinse with water several times and drain the water.

Mix sugar, salt, stock and warm water.

Add black beans and soak them for 6 hours in summer and 12 hours in winter.

Put the soaked black beans and the water in which they were soaked into the pot and bring to a boil. After boiling the water, add 120 ml of cold water and then boil. After the water boils, add the same amount of cold water and wait until it boils again. Just switch to low heat, cover the pot (leaving only a small gap for ventilation) and cook for 3 hours.

When there is still a little soup, add maltose (or honey). Once the maltose melts, turn off the heat. Let cool, stir in sesame seeds and serve.
