manufacturing process
1. Making dough:
A spoonful of lard, butter, eggs, sugar and salt, break up and stir evenly (in fact, I have stirred it dozens of times, which is easy), then add a proper amount of flour and knead it into a uniform dough;
2. Making stuffing:
1) cut the diced cloud legs and steam them in the pot;
2) Stir-fried noodles: put a little lard in the hot pot until the lard becomes dry flour, and keep stirring until the color is slightly darker;
3) Stir the diced cloud legs, cooked noodles and sugar evenly. If it is too dry, you can add a little lard;
3. Packaging moon cakes:
1) put the prepared stuffing in the refrigerator for a period of time, waiting for the lard to form a block, which is easier to wrap;
2) Take a proper amount of small pieces of dough, knead them evenly by hand (because oil is easy to soften and knead them evenly), pat them into cakes by hand (the dough is ok, but it is a little sticky), wrap the stuffing, pinch the openings together, then turn them over and shape them, and put them on the oiled baking tray;
4. Baking:
Preheat the oven at 220 degrees and bake for about 25 minutes, during which the egg liquid is brushed twice.
