Ingredients?
450g flour
230g warm water
An appropriate amount of fresh durian
A small amount of powdered sugar

How to make durian pancakes?
Add warm water to flour and stir with chopsticks to form a fluffy consistency. After kneading into a smooth dough, cover with plastic wrap and let rest for half an hour. I forgot to take pictures at this step. Will make up for it next time.
Knead the risen dough (be careful not to add flour!) until it doesn’t stick to your hands. Divide into several small doses, about 1/3-1/4 fist size. Because I forgot to take pictures at this step, I could only use the old pictures.
Roll out the dough as thinly as possible. There are two rolling methods: ① First roll out two dough pancakes of about the same size. ② Roll out only one piece of dough. Make sure to apply vegetable oil on the kneading mat and rolling pin before rolling.
① Brush one of the rolled out dough pieces with vegetable oil. ② Brush vegetable oil directly on the dough.
Wear gloves and spread fresh durian directly on the dough brushed with vegetable oil. After spreading evenly, sprinkle with appropriate amount of powdered sugar according to personal preference. You can also mix durian with sugar and then spread it on the pancakes.
This is the dough after the durian is evenly spread.
①Place another piece of rolled out dough on top of the durian-smeared dough, and press the edges tightly.
② Fold the dough in half and press the edges tightly.
Brush a thin layer of vegetable oil on the pan and preheat over low heat. It is best to keep the heat on low to prevent the pancakes from being too dry or over-cooked.
Put the unoiled side of the dough into the flat pan. When the top side of the dough is bubbly, flip it over.
Fry the two-sided pancakes until they are lightly golden and ready to serve.
After taking it out of the pan, cut the cake and it’s ready to go
This is a durian cake made according to the ② rolling method. Pay attention to brushing some vegetable oil before turning it over, and then turn it over. The cake is basically ready when it bubbles. Otherwise, it will be too dry or slightly burnt if fried for too long.
Tips
① Durian can be replaced with banana, then it will become banana pancake.
② Some kitchen friends reported that the durian cake made according to the original recipe was slightly dry, so I made a slight adjustment: by brushing the rolling agent with oil, the cake can be rolled out thinner without adding flour. On the other hand, it may be that the heat is not controlled well: the pancakes must be cooked on low heat throughout the process. Fry the pancake for 5-10 seconds until it bubbles, and this side is basically done.
③The durian cakes made with 450g of flour will have 7-8 durian cakes with a diameter of about 28cm. Please adjust the amount according to the number of sheets you need to make.
