Materials: 500g of crispy Anhui fish, 100g of hot pot base, 10g of ginger, 10g of garlic, 5g of chili pepper, 1 tablespoon of cooking wine, 1 tablespoon of light soy sauce, salt to taste, sugar to taste, chicken broth to taste, cooking oil to taste
Practice:
1. Wash the crispy Anhui fish, cut it into small pieces, and marinate it for 10 minutes with salt, cooking wine and shredded ginger.
2. Put the hot pot base into a pot, add the right amount of water, bring to a boil and then turn down the heat to cook for 10 minutes.
3. Add ginger, garlic and chili pepper and stir-fry, then add the marinated crispy Anhui fish pieces and stir-fry well.
4. Add soy sauce, salt, sugar and chicken essence, stir-fry well and cook until the fish turns white.
5. Pour the cooked crispy Anhui fish into the hot pot, add appropriate amount of cooking oil, boil and serve.
Note:
1. Crispy Anhui fish marinating time should not be too long, otherwise it will affect the taste.
2. Hot pot base can be chosen according to personal taste, or can be replaced by other seasonings.
3. When cooking crispy Anhui fish, the time should not be too long, otherwise the fish will become old.
