Seasoning: vegetable oil 75g salt 25g soy sauce 10g monosodium glutamate 1g sugar 5g yellow wine 5g each.
Method for frying spiral noodles:
1. Put 1 00g of clean water and1g of fine salt into flour, knead and stir, then knead into long strips, pick 50 blanks, and put the blanks on the edge of the scouring basket to make them spiral for use.
2. Boil water in the pot, push down the blank of snail noodles, boil with high fire, turn to low fire, take out, soak in clear water and drain.
3. Heat the pot, put 25 grams of oil, fry shredded pork and winter bamboo shoots until cooked, cook rice wine, add soy sauce, 50 grams of fresh soup, stir-fry with sugar for a few times, and pour out.
4. Heat the pan and put the oil. When it is 80% hot, add the noodles, stir-fry with fine salt for a while, then add the leek seedlings, stir-fry with monosodium glutamate for a few times, then pour in the fried winter bamboo shoots and shredded pork, and mix well to serve.
