Specific practices are as follows:
1, put the cleaned tripe collar in a container, add hot lime water, soak it for about 2 hours, take it out, scrape off the black film with a knife, wash the lime smell with new water, and put it into a cold water pot on the fire. Burn, cook for more than 1 hour, cook until it is 70% mature, fish it into a cold water basin, soak it in cold water, and slice off the oil and tendons on the surface of the belly collar.
2. Put the pot on the fire, put it back into the belly collar, add the onion, ginger slices, cooking wine, some salt and a proper amount of water at the same time, boil it for 1-2 hours, cook it until it is crisp and cooked, leave the fire, soak it in the original soup for another 2 hours, take it out and let it cool, slice it into thin slices, put it on a plate, and sprinkle the remaining salt, monosodium glutamate and Chili.
The tripe collar refers to rumen and reticulum. Cattle are ruminants, * * * has four stomachs, the first three stomachs are esophageal variations, namely rumen (grass belly), reticulate stomach (honeycomb stomach, hemp belly), flap stomach (double flap stomach, louver), and the last one is abomasum (abomasum).

Rumen can tear off the serosa of cattle, keep the mucosa, and rinse raw slices, such as "hairy belly hot pot" and "husband and wife lung slices" The application of reticulum is the same as rumen. Flap stomach and abomasum are mostly used for shredding. Belly collar and louver are widely used in tripe.
