How to make shrimp and vegetable cakes

Peel potatoes, zucchini and carrots. Grate into strands and set aside. (I remove the seeds from the zucchini every time. You don’t have to, it depends on your personal preference)

Peel the prawns and remove the devein. Place the shrimp on a chopping board and use a knife to fluff the shrimp, then chop into small pieces. Chop green onions directly and set aside.

Put prawns, green onions, 3 eggs, appropriate amount of flour and appropriate amount of salt into the shredded vegetables. Mix well. If the flour is a little thick after letting it go, don't move it. Stir evenly and let it sit for about 20 minutes. There will be more water than before. If it is still thick, add some cold water.

After stirring. It should look like this. If you think it's thin, you can add flour and it'll be fine if you think it's suitable.

Put the oil in a frying pan or a pancake pan. When the oil is about 70 to 80% hot, put the batter into the pan and spread it evenly like spreading a pancake. Finally, reduce the heat to medium-low and fry until both sides are brown, then take it out of the pan. This also comes down to personal preference. If you like it to be more charred, you can take longer, if you like it to be more tender, you can take a shorter time!
