Production process:
1. Fill a clay pot with an appropriate amount of water, wash the barley and ribs, soak the mushrooms, and put them in together (if you want the soup to be clearer, you can drain the ribs first to remove the blood before adding them in, but I usually put them in together. Put it in, bring it to a boil and skim off the foam on the soup noodles, so that the soup tastes thicker). After it boils over high heat, skim off the foam.
2. Add the winter melon and ginger, and cover the pot. After the water boils, turn down the heat and simmer for about fifty minutes, then add salt and chicken essence to taste.
