With his unremitting efforts, he has improved and innovated more than 200 kinds of Shandong cuisine. Yan Jingxiang, a native of Jinan, Shandong, was born in 1939. He started working in 1956 and has been engaged in the cooking profession. At the age of 18, he became an apprentice with the famous chef Mr. Liang Jixiang at Yanxitang Restaurant in Jinan, and learned from teachers such as Wang Yuming and Li Mingzhu. In 1978, he won the first place in the first cooking competition of Shandong Province.
In 1983, he won the title of "National Outstanding Chef" at the first national cooking technology performance appraisal meeting. In 2001, he was awarded the title of "Chinese Famous Chef" by the Chinese Cuisine Association. In 2002, it was awarded the "National Assessor" by the Ministry of Internal Trade and the Ministry of Labor and Social Security. In 2006, he was awarded the title of "Chinese Famous Chef" by the Ministry of Commerce. In 2007, he was awarded the Chinese Culinary Master Golden Goblet Award by the China Cuisine Association. In November 2011, he was selected into the "National Famous Chef" ceremony.
Master Yan has superb skills and is good at making Shandong cuisine. His main representative works include lotus shark's fin and hundreds of other Shandong cuisine masterpieces. His cooking skills such as cutting meat into silk cloth, deboning whole chicken, deboning whole fish, and grabbing spring roll wrappers with his hands are breathtaking.
