Bird's nest stewed with papaya
Main ingredients: 1/4~1/2 fresh papaya (depending on the size), 30~50 grams of bird's nest marigold, 50 grams of rock sugar.
Practice:
1. Wash the skin of papaya, cut it open with a knife, remove the inner core, scoop out the papaya meat with a spoon, and set aside;

Bird's nest is the nest of swiftlet and many other species of the same genus of swiftlet with saliva and downy feathers mixed with the condensation, shaped like a treasure, the outer wall of the nest by the dense cross-bar of filaments piled up into an irregular prismatic protuberance, the inner wall of the nest by the filaments weaved into an irregular mesh, the nest of the bowl root but solid, the ends of the small drop angle, generally 6-7 cm in diameter, 3-4 cm in depth. The roots of the nest bowl are solid, with small drop angles at both ends. It is mainly produced in China's South China Sea islands and Southeast Asian countries. Bird's nest can be divided into three kinds due to different collection time.

It is white and transparent, with large wall thickness and high hair growth rate, which is the top grade of bird's nest and was listed as tribute in ancient times, so it is also known as Palace Bird's Nest.
2. Hairy Bird's Nest: The second nest made by the swiftlet, due to the consumption of saliva, the swiftlet has to use the fluff and saliva to build the nest. There are more black hairs in the nest wall, which is of lower quality.
3. Blood Swallow: The third nest made by the swiftlet, at this time, the saliva is almost exhausted, so it has to use the small fish and seaweeds that it has just eaten and not yet digested to make a nest. The nests are mixed with blood filaments, small, thin-walled, hairy, and have the worst texture.
Bird's nest is highly nutritious, containing 50% protein, 30% sugar and some minerals. The bird's nest can be steamed and made into soup, such as: steamed capsule, bird's nest in clear soup, bird's nest with rock sugar, or pigeon egg soup.
Bird's nests with large wall thickness, small roots and feet, few feathers, thick ribs, white color and luster are the best.
