First, you don't need to cook rock sugar. You can add it directly when you put it into the bird's nest, but you must know the amount of sugar. First of all, according to the gram weight of bird's nest, 1g dry bird's nest is added with water 50c.c. So when you stew 3g dry bird's nest, the amount of water added is 150c.c, and the rock sugar is generally 10 to 15g (try the sweetness of sugar first, and the sweetness of each brand is different), so try the sweetness first every time.
Second, rock sugar should be stewed in advance until it melts. Because of personal requirements for sweetness, several people stew a large bowl of bird's nest, some people want to be sweet, and some people want to be light. When catering to everyone's tastes, rock sugar can be cooked in advance.
