Steps
1. Prepare the materials
2. Sugar and Sichuan peppercorns
3. Cut the meat into small pieces
4. Boil the Sichuan peppercorns in water and cut into pieces Blanch the meat in water, take it out and drain the water
5. Add onion and ginger to the pot and start cooking the meat, cook for about an hour
6. Cook until the meat becomes rotten when poked , then take it out
7. Control the water and let it cool
8. Roll it out vigorously with a rolling dough stick
9. Use both hands to rub it and then roll it out
10. After rolling it out, use your hands to stir-fry it. It will be more fluffy after frying.
11. Put oil, sugar and soy sauce in the pot and start frying the meat. If you want to keep stirring, I use Stir-fried in an electric pan
12. Stir-fry until dry and loose and the meat turns light yellow, take it out, let it cool, and put it in a crisper, it’s not bad
