How to make it?
(1) Wash abalone and keep it fresh for later use. Cut the sea cucumber into pieces about 2cm * 3cm, add boiling water, add some Shaoxing wine, ginger and onion, cook for about 2min, wash and remove the fishy smell. Soak scallops in warm water (keep them intact) for later use.
(2) Wash the potatoes, slice them, soak them in water (remove the mud, and they will not turn black after steaming), steam them in a cage for 10 minutes, take them out, put them on a chopping board and roll them into mashed potatoes with a knife.
(3) Heat a wok, add chicken oil, add ginger onion and saute until fragrant, add abalone, sea cucumber and scallop and stir-fry until fragrant, then add chopped potatoes, add soup, stir-fry evenly with slow fire, add chicken essence, salt, pepper and Shaoxing wine, stew for about 50 seconds until cooked and tasty, and add a few drops of sesame oil.
Stewed potatoes with abalone
Ingredients: The materials needed to make abalone stewed potatoes are very simple. Abalone can be selected according to personal preference. Potatoes, chicken essence, cooking wine, salt, sugar, aniseed, pepper, pepper and onion ginger can be used in moderation.

Ingredients: 8 abalone, 0.5 old hen, appropriate amount of Yao Zhu, appropriate amount of ham, sugar, onion, ginger, raw flour.
Practice:
1, eight dried abalone soaked in clean water for 48 hours, constantly changing water in the middle, and washing after soaking (there is a place like a sand mouth to be pulled off).
2. Pour it into boiling water and cover it for one night, then take a casserole and put half an old abalone hen or a flying water. You can cook chicken soup first.
3, a handful of Yao Zhu, a few slices of ham, a proper amount of sugar, ginger and onion, add enough water to boil, then turn to low heat, and turn off the fire after five hours. Put enough water at a time, and don't add water halfway, otherwise the abalone juice will not be strong. There is no need to add salt. Yaozhu itself has a salty taste. The more you cook it, the salty taste will naturally come out.
4. After turning off the fire, remove the material residue after removing the abalone, and leave the abalone in the casserole for one night (the casserole is insulated, so it must be made in a casserole).
5. Add oyster sauce and cook for another two hours the next day (add some salt if you think it is not salty enough). If you are not in a hurry, turn off the fire and simmer again.
6. Wait until the third day before firing and boiling for ten minutes, then turn off the fire. It is difficult to repeat this abalone for a few days. When eating, thicken the juice with raw flour and pour it on it.
