Staple food: yam 200g.
Accessories: 5g onion, 5g sugar, 5ml soy sauce and 8ml peanut oil.
Production process:
1. First of all, let's prepare the ingredients needed to make this fried yam: 1 common white-billed yam, about 150g. The same is true of iron stick yam, which tastes soft and waxy when cooked. White sugar or fudge is fresher, seasoned with a spoonful of dilute salt, even without salt. Add a little chives to improve the color and taste before cooking, and the whole dish has a higher value.

2. Clean up the dirt on the skin of yam, peel off the skin and cut it into coin-thick slices with a knife. Cut as evenly as possible, so that the cooking is relatively consistent. Try to wear disposable gloves when handling yam, or wash your hands with vinegar in advance before touching yam, otherwise it will cause itchy skin.

3. Pour the prepared soy sauce into the container of white sugar, and soak and melt the white sugar in advance. Soft white sugar is better, so is brown sugar, which is easier to color than soy sauce.

4. Pour a thin layer of oil into the pot, and then heat the pot with medium heat. When the oil temperature reaches 60%, put the prepared yam slices into the pot and fry them slowly until golden brown.

5. After the yam is cooked, you can smell the rich burnt fragrance. Don't use a spatula to turn it over, just take the pot and turn the yam slices over with a spoon. After frying until both sides are golden, pour in the prepared soy sauce syrup.

6. After pouring the soy sauce syrup, the yam will be slightly sticky. Shake gently so that each yam slice is covered with soy sauce syrup. Dry the soup with low fire, fry the yam slices until they are slightly golden, sprinkle with shallots and serve.
