The first is braised hairtail.
Braised hairtail is the most common practice in hairtail. First of all, we clean hairtail and marinate it with onion, ginger and cooking wine for about an hour to remove the fishy smell inside. Pour the flour into the plate, wrap the hairtail in the flour, and pour a little oil into the pot. When the oil is hot, fry the hairtail until both sides are golden. It's best to use a non-stick pan directly here to avoid spreading the hairtail. Stir-fry onion, ginger and garlic with the remaining oil, add pepper, if you like spicy food, add more dried pepper, add soy sauce, soy sauce, balsamic vinegar, cooking wine, oyster sauce and a little rock sugar, put the fried hairtail into a pot and stir it evenly, then add water before hairtail, and simmer for 20 minutes after the fire is boiled.
Second, sweet and sour hairtail
Sweet and sour hairtail is a very suitable dish for children, and the preparation method is similar to that of braised hairtail. Similarly, the hairtail is marinated for one hour, coated with flour, and fried in a pan until both sides are golden. Leave a little oil in the pot. When the oil is hot, add onion, ginger, star anise and fried hairtail. Add vinegar, soy sauce and cooking wine, stir-fry until fragrant, pour in boiled water without hairtail, and finally add a few spoonfuls of sugar, a little salt and pepper. After boiling, simmer for a while to collect juice, and sprinkle some chopped green onion before taking out.
Third, fried hairtail
Fried hairtail is a delicious food, and it is not too much as a snack. After cleaning hairtail, add shredded ginger, shredded onion, dried tangerine peel and cooking wine, stir well, marinate for one night, coat flour on the surface of fish pieces, heat oil in the pan, and fry hairtail directly in the pan until both sides are golden. Don't turn it all the time when frying fish, because the fish pieces are very brittle when frying fish, and then turn them over when it is gradually formed. The fried hairtail made by this method will not feel fishy at all, and it is very delicious.
