Ingredients: Monopterus albus 25
Accessories: ginger, onion, salt, oil, monosodium glutamate and soy sauce.
Method of eel noodles:
1. Keep it in clear water for two days.
2. Cut your belly open with scissors. Don't hurry to get rid of your head. Prepare clean water and put the eel in it to swim. Slowly drain the blood and then fish it out to remove the head and intestines.
3. Blood for standby.
4. Break the eel spine with the back of a knife and cut it into pieces.
5. Stir-fry the eel in Jiang Mo, and make soup with eel blood.
6. Boil the noodles first to remove the alkaline water (the water will boil for two minutes).
7. Take out the noodles and put them in the standby eel soup for another minute. Add salt, monosodium glutamate, soy sauce and pepper.
8. Sprinkle with chopped green onion.
Precautions
Monopterus albus has mucus, which is very smooth and not easy to kill. You can pour a small amount of white wine into Monopterus albus, and then use scissors to open the stomach.
