Practice of duck tongue in Wenzhou sauce
1. Wash onion and cut into sections, slice ginger, peel garlic and wash duck tongue with running water.
2. Add enough water to the pot, add the washed duck tongue, turn to medium heat for 5 minutes after the fire boils, remove the duck tongue, and then rub it repeatedly with clear water to pour out the water that has cooked the duck tongue.
3. Pour a proper amount of water into the pot. After the fire boils, put the washed duck tongue in it for one minute, take it out and drain it for later use.
4. Put the drained duck tongue into a bowl, add 15ml soy sauce and 15ml cooking wine, sugar, salt, onion, ginger and garlic, mix well and put them in the refrigerator for 5 hours.
5. Pour some oil into the pot. When the oil is hot, add onion, ginger and garlic and stir-fry until fragrant. Add salted duck tongue, add rock sugar, soy sauce and remaining cooking wine, and add enough water to the surface of duck tongue. After the fire boils, simmer for 20 minutes until the soup is dry.
