Wash and cut the fish.

Fry in a baking pan until slightly yellow.

Put the fish in a stone pot and add cooking wine, soy sauce and oyster sauce.

Add ginger slices, red pepper, tofu and tofu water oozing from tofu.

Fill with water, cover the pot, simmer on high fire, and then simmer on low fire for more than 10 minutes.
Tip: You don't have to use a barbecue pot to fry fish in the usual pot. The water oozing from tofu must not be poured out, and it is delicious to stew. There is no stone pot as delicious as ordinary stew.
