How to cook boiled shrimp well
I am close to Beihai, a coastal city, and I am most familiar with the sweet and beautiful boiled shrimp. After cooking, you only need half a lemon to decorate this dish. The following is a recipe for cooking shrimp, as long as you follow it, you will succeed.

(1) Material preparation: 500g of fresh (chilled) sea shrimp, 4 cups of apple vinegar 1, 3-4 tablespoons of old harbor seasoning (or the amount suitable for your taste), ice water, lemon 1 piece (cut in half for decoration).

(2) Operating steps:

Step 1: Boil a pot of water until it just boils, as shown below. You need enough water to cover all the shrimps. After all the shrimps are put in, the water is higher 1 to 2 inches (2.5 to 5 cm) than the shrimps.

Add: 1/4 cups of apple vinegar+a little salt+seasoning (3 to 4 tablespoons of old harbor seasoning) to the water, as shown below.

Step 2: Boil the water with seasoning. This can turn "water" into "soup", and then you can soak the shrimp in the soup.

Step 3: Put the fresh shrimp into the water, as shown below. Most chefs think it's best to cook shrimp with skin. Although peeling is troublesome, it can make shrimp more delicious. If you like, you can remove the shrimp line before cooking it.

Step 4: Continue cooking until some shrimps float, as shown below. There is no fixed time to cook shrimp. It takes about 2 to 3 minutes for smaller shrimp (above 50 per catty) and 5 to 7 minutes for larger shrimp (below 30 per catty). This time is for reference only.

If you want to judge the maturity of shrimp, you can look at the thickest part of the shrimp. If it becomes opaque, it means that the shrimp is basically cooked.

Be careful not to overcook the shrimp. Shrimp that is overcooked will become hard to bite and taste like rubber. So, when the shrimp comes out of the water, it can stop heating.

Step 5: Pick up the shrimp with a sieve and put it in an ice bath. Put the shrimp in an ice bath with a strainer and you can take it out directly. This will prevent the shrimp from being overcooked.

Step 6: Drain the shrimps thoroughly, put them in a shallow dish and decorate with half a lemon, as shown below. You can enjoy it now.

Tip (must see):

Don't overcook the shrimp. Overcooked shrimp is hard to bite and not delicious.

Old shrimp and frozen shrimp are not easy to peel.

Adding 2-4 cloves of garlic or 1 2 slices of onion to water can add some flavor to soup and shrimp.

Remember, don't make it so complicated. All you have to do is cook according to the recipe.

You can use ketchup, horseradish, lemon or lime juice, Chili sauce, spicy soy sauce and honey to adjust the sauce.

Add potatoes, sausages and onions when adding seasoning, and then add shrimp, corn, clean crabs and crayfish when the potatoes are half cooked. These things take about the same time as shrimp, so when the shrimp floats, it can be placed on a plate and on a table covered with newspapers.

Cover and cook, so that the shrimp can be cooked quickly, but be careful not to overcook it.
