1. Wash lentils and remove the head and tail for later use.
2. Replace lentils with knives and cut them into pieces for later use.
3. Put the cut lentils into a pot and add salt and ginger slices.
4. Stir and marinate evenly 1 hour.
5. After1hour, put the lentils into a clean oil-free bottle.
6. Cover it with a plate and turn it over.
7. Pour the water into the dish and put it on the windowsill for natural fermentation.
8. Change the water once a day and take it out for 3-4 days.
