1, prepare raw materials.
2. Wash the glutinous rice.
Because what I do is a simple and easy way, I cook it directly with a rice cooker, and I don't need to soak glutinous rice. If I steam, the glutinous rice will be soaked for about 4 hours in advance.
3. Put the glutinous rice into the rice cooker, add appropriate amount of water and cook until the rice is cooked.
It is worth noting that the water should be put a little less than when cooking. As for the specific ratio of rice to water, the leaves are almost the same as when they are cooked normally, but the rice should not be cooked too soft, because the leaves are not cooked hard for the first time.
If you don't know the proportion very well, you can also use steaming.
However, if the glutinous rice is soft, it can be remedied, as the following tips will talk about.
4. After the glutinous rice is cooked, grind it with one end of a clean rolling pin.
This picture is my first time. The rice is so soft that the finished product behind it is not easy to shape.
If you make rice cakes, you need to grind them until there are no rice grains. If you make Ciba, there will usually be some rice grains, which will taste better.
Making rice cakes is actually very simple. Put glutinous rice on a silica gel mat or a clean chopping board and grind it with one end of a rolling pin.
If you are making Ciba, you can put the glutinous rice in a relatively strong sealed bag and beat it with a rolling pin.
5. Cover the crisper with plastic wrap. In order to prevent sticky hands, put a little oil on the plastic wrap, then put the semi-finished products in, flatten them, and put some cold water on your hands so that it is not easy to stick your hands. You can also put some oil directly in the crisper without plastic wrap.
Put it in the refrigerator for cold storage and molding.
6, cut into pieces is the rice cake.
7. Brush the oil in the pan and fry the sliced rice cake until both sides turn yellow.
If it's a Ciba, there are some rice grains. Cut it into slightly larger pieces. Restaurants are generally fried greasy, so it is recommended to fry leaves.

8. After frying, pour a little osmanthus, which is very fragrant.
Tips:
If the glutinous rice is soft, you can also take remedial measures:
Add a proper amount of glutinous rice flour first, but the taste will be slightly worse if you taste it carefully;
Second, or just fry a big cake in the pot, both sides are yellow. When it's hard and crisp, you can slice it and eat it. This is more suitable for lazy people to drip like leaves, haha ......
