I don't like to eat fatty meat, but I fell in love with the braised pork. The fat but not greasy, the braised pork is so delicious that it melts in the mouth. From now on, I will make it every now and then, changing the pattern, braised pork with dried tofu, braised pork with eggs, braised pork with pickled vegetables. Today I will make braised pork and stewed potatoes. Instead of frying the sugar with rock sugar or white sugar, stir-fry with brown sugar and water. Use beer instead to make braised pork that is more delicious.
Ingredients
700 grams of pork belly, 2 potatoes, 2 bottles of beer, appropriate amounts of onions, ginger, star anise, cinnamon and bay leaves.
Condiments
Add appropriate amounts of brown sugar, light soy sauce, dark soy sauce, salt, and cooking oil.
Method
Step 1: Wash and cut the pork belly into small cubes and set aside. Heat the pot, add the pork belly and stir-fry to remove excess fat from the pork belly.
Step 2: Stir-fry the pork belly until the outside is slightly brown, remove from the pan and place on a plate for later use.
Step 3: Heat the pot, pour in a small spoonful of oil, add three small pieces of brown sugar and stir-fry the sugar color.
Step 4: Stir-fry the brown sugar over medium heat until it bubbles and turns maroon.
Step 5: Then pour in the pork belly and stir-fry over high heat for one minute so that each piece of pork belly is coated in sugar color.
Step 6: Pour an appropriate amount of beer to cover the pork belly, then add two tablespoons of light soy sauce, one tablespoon of dark soy sauce, and a small spoonful of salt and bring to a boil over high heat.
Step 7: Prepare a few slices of ginger, two green onions tied into knots, 1 small piece of cinnamon, 3 star anise, and 3 bay leaves
Step 8: Prepare the Pour the good spices into the pot, stir evenly with a spatula, cover the lid and simmer over medium-low heat for 40 minutes. Open the lid and stir it halfway to prevent it from sticking to the pot and burning.
Step 9: When the braised pork is almost done, peel the two potatoes and cut them into small pieces. Cut them and put them on a plate for later use.
Step 10: The braised pork is almost cooked, then add the chopped potatoes and stir evenly.
Step 11: Cover and simmer over low heat for 10 minutes.
Step 12: After 10 minutes, if chopsticks can be easily inserted into the potato, it means it is cooked. Then reduce the juice until the soup is thick, and then serve it out of the pot.
